Dad's Potato Salad

Dad's Potato Salad
Preparation Time 1 hour

Ingredients:
6 peeled and diced potatoes (approx. 8 cups diced to ½ inch cubes)
6 eggs
2 finely chopped pickles
1 ¼ cups finely chopped red onion
2 finely chopped celery sticks (optional)
2 ½ tsp salt
½ tsp pepper
2 tsp garlic powder
1 ¼ cup mayonnaise
3 tbsp Dijon mustard

Put eggs on to boil in small pot of water, boil for 10 minutes. 
While eggs are boiling, peel and dice potatoes. Put potatoes in a large pot, put in enough water to cover them and boil for 10 minutes.

When eggs are done, remove from heat and run cold water in the pot until they are cool enough to handle.  Peel and chop up the eggs.

Drain potatoes and put them back in the pot. Season  them with the salt, pepper and garlic and lightly stir so all of the potatoes are seasoned.  Let stand covered for 5-10 minutes so the potatoes can absorb the seasonings.

Add the eggs, onions, pickles and celery.  Lightly stir.

Add mayonnaise and mustard. Stir until completely mixed.  Should be slightly creamy, if it seems dry, add a little more mayonnaise.

Refrigerate covered for at least ½ hour or until ready to serve.  This salad will keep (covered in the refrigerator) for three or four days.  So you can prepare it the day before if you want to.
